Grilled Eggplant


This may not be everyone's favorite, but you should really give grilled eggplant a try.  Once you have experienced this recipe, you will be coming back for more!

Grilled Eggplant

Relative to the tomato and potato?

According to Wikipedia, the eggplant is closely related to the tomato and potato, is native to India and the seeds it contains are a close relative of tobacco.  Who would have guessed? 

   1 eggplant

  • 3 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons garlic - minced
  • dash of oregano
  • dash of thyme
  • salt to taste
  • freshly ground black pepper to taste

In a small bowl, thoroughly combine all of the ingredients, with the exception of the eggplant.

Next, cut the eggplant lengthwise into about 1/2 inch thick slices and brush the sliced eggplant on both sides with the marinade mixture you just made. Let sit for 5 to 10 minutes to soak up the flavors.

Fire up  your grill for a medium-hot fire.

Just before placing the eggplant on the grill directly over the heat, again brush them with the marinade and place on the grill.

Grill for about 7-9 minutes on each side and serve hot and fresh!
