Savory Bacon Stuffed Pork Chops

This recipe will take you a little longer to prepare, however it is going to be well worth the effort.  Prepare your stuffing in one sitting and then stuff the chops later in the day.  You will enjoy the journey to some savory stuffed pork chops!

   4 - 2-inch thick pork chops, bone-in rib loin chops

  • 2 1/2 cups seasoned crumbled cornbread
  • 1/2 cup chicken broth
  • 3 slices bacon, chopped
  • 2 stalks celery, minced
  • 1 small onion, minced
  • 3 cloves garlic, minced
  • 2 tablespoons freshly chopped parsley
  • 1 tablespoon freshly chopped rosemary
  • 1 tablespoon freshly chopped sage
  • Freshly ground black pepper

In a large skillet, begin frying bacon. When the bacon is mostly done and a little crispy, add celery, onion and garlic to pan and allow to cook with the bacon. Add the rosemary, sage and parsley after bacon has cooked for 8 to 10 minutes. Saute all. Season with the salt and pepper.

In a large bowl add cornbread and chicken stock. Stir in the vegetable you just sauteed. Mix well.

Preheat grill to medium-high heat.

While the grill is heating, split the chops to the bone and season with salt and pepper to fit your tastes. Stuff each chop with about 1/2 cup of stuffing. It might be helpful to use toothpicks to hold the pork chops together. Grill the chops for 5 to 7 minutes per side until done. Allow chops to rest for 5 minutes before serving.
