Wake Up Molasses Marinated Pork Chops

It really won't keep you up!

The coffee is just for flavor, so don't worry about enjoying this wonderful dish late at night!  The coffee, maple syrup and Dijon mustard make this a winning dish 7 nights a week.

  • 1 cup cool strong coffee
  • 1/3 cup molasses
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon teaspoon freshly ground black pepper
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon fresh ground ginger
  • 1/2 teaspoon thyme

Place all of the ingredients into a 1 gallon zip lock bag, seal, and shake to combine. Place in the refrigerator to marinate for 2 to 8 hours turning occasionally.

When ready, get your outdoor grill ready for medium-high heat.

While the grill is heating up, remove the pork chops from the marinade and cover while we take a quick moment to get the glaze ready. Transfer your remaining marinade to a small saucepan and place over medium-high heat. Bring to a boil and then boil gently, stirring often, until the marinade has been reduced to 1/2 cup of liquid. Once that is almost complete, grill pork chops 5 to 7 minutes on each side over a medium hot grill or until they reach an internal temperature of 145°. Remove the chops to a warm serving dish, pour the glaze over the chops and serve.
